A chef par excellence, a man who loved food and relished it, a man who had the will and the right business acumen to make his childhood dreams a living reality.
Ajab Singh Rawat, the man whom lies the onus of making the name of Indian cuisine synonymous with delectable North Indian flavours, is the founder of Roti-Boti. Ajab Singh Rawat has spent 35 years in the exacting kitchens of Sheraton, Oberoi, Le Meridian and other five star hotels all around the world.
He has spent the last ten years working for a few top most Indian restaurants here in Melbourne. This is the reason why he is most popularly known as "Gypsy" among his friends.
The following outline some of his achievements:
- Gold Medal Winner at the National Culinary Arts Exhibition and contest held in Delhi in 1990.
- The Age Good Food Guide Award Winning Chef for 1992, 1992 and 1994.
- Silver Medal Winner at the National Culinary Arts Exhibition contest held in Delhi on 1990.
- Singh is ably assisted by two internationally qualified chefs.
